Scrambled Parmesan Eggs with Ham

My day starts after i have had breakfast, i couldn’t go by without it so forget selling me intermittent fasting. Eh ehm never say never but for today i’ll definitely pass. I’m starving so none of that caramelised onions and red pepper potato frittata or breakfast muffin bake stuff. I need something warm that takes 5 minutes or less but fills me up for hours. Scrambled eggs and Italian cooked ham quickly come to mind. And no porridge today thanks, i’m craving something chewy that goes down well with a strong black chai masala brew.

I have been on a mission to cut down some pounds and thought: “why not skip the warm breakfast and try smoothies for a change?”. Well, this went down well for 2-3 days then it all started to go downhill when i woke up one morning to make pancakes as is the Sunday ritual and my smoothie challenge went out the window. And next i was digging into fluffy pancakes smothered in Nutella. Ahh, if not for lack of sleep from the little one- that’s what i would be stuffing my mouth with right now. I have a thing for warm food, i just can’t shake off that preference- what about you?

I commend those who can do without bread. Those who will hit the health highway and chow down eggs with avocado and call it a day. Me on the other hand? Well, the picture speaks for itself.

Can I use diced ham?

Yes, you absolutely can, but I would suggest you add it to the whisked egg.

Is scrambled eggs and ham healthy?

Yes, but not if you’re chowing down on this every morning. You can mix it up a bit and maybe have the scrambled eggs without the ham but have a side of sliced avocado on toast. Disclaimer: I am not a nutritionist so please do not use this advice to change your lifestyle

Why not add some milk to the scramble?

Because I prefer my eggs on the dry side, but you can add a little drizzle to ‘loosen’ yours a bit. Do it to your preferred doneness and enjoy

Which bread did you use for this recipe?

I used the Whole grain, spelt, and coconut rolls which are just delicious with a more than generous smear of peanut butter or Nutella.

Be careful not to overindulge with the salt because the cheese is salty.

This recipe goes against the traditional way of making scrambled eggs as i like mine over well done and not soggy or wet. If that is your preference you can make scrambled eggs to your preference then top it of with ham.

If you aren’t able to find Italian ham you can use whichever one you find but it needs to be sliced and not be over spiced or with herbs. Since i used a very thin and delicate ham i chose not to cook it together with the eggs. However if yours isn’t as thin i would recommend whisking it in with the eggs.

A sweet and soft crumbed loaf loved up with butter, orange zest, warm notes of vanilla and coconut milk. Toast and lather me with marmalade, love me!

Ingredients

  • 3 small organic eggs
  • 40g finely grated parmesan or parmigiano reggiano
  • Olive oil
  • Salt and pepper
  • 3 slices of ham

Instructions

Whisk the eggs, finely grated parmesan and a pinch of salt

Heat 4 tbsp of olive oil in a nonstick frying pan on medium high heat

Pour in the egg mixture and leave to fry for about 1 and a half minutes then flip it over and using a wooden spatula scramble the egg for as it cooks for another 30 seconds then take it off the fire.

Lay the ham on the bread and top with the scrambled eggs. Finish it off with some freshly ground black pepper

If you feel like spoiling yourself you can top this off with a slice of mature sliced cheese like gouda. However if you prefer a more subtle nutty flavour then try a dutch cheese like Leerdammer or Emmental.
