A breakfast burrito filled with slow-cooked sweet red onions, paired with ripe diced tomatoes and red jalapeno that pack a punch! Perhaps served between fried bread or toast. Okay, I am getting carried away now! But you see what I mean right? You need not stick to the wrap.
"Choose to chill out and just eat something different" Share on XI look forward to breakfast. So much that sometimes it’s all I can think of when in bed and can’t sleep. This is after dinner- so does that make me a glutton? Or just another one of those who constantly thinks about food? I feel like there are days or weeks that pass by and it’s as if I have been in a rush to somewhere or some chore and just picked up the quickest thing I could.
Other times, when I have a few minutes to spare I make sure to choose to chill out a bit and just eat something different. Lord knows breakfast need not be a bore because that’s just not the way to start off the day.
And if you are short on time you can prepare the fillings the night ahead. I like a breakfast burrito but this also works well with just plain bread, want to try your hand at baking some? Here are some bread recipes.

A very quick and simple ham and egg roll in a bun
Jalapeno breakfast burrito
Breakfast burrito with slow cooked sweet red onions paired with ripe diced tomatoes and mildly hot red jalapeno to make your everyday scrambled eggs exciting
Ingredients
- 3 tbsps finely diced red onions
- 2 medium size diced ripe tomatoes
- 1 tbsp chopped red jalapeno
- 2 tbsp ketchup
- Sunflower oil
- Salt and pepper
- 1/4 tsp smoked paprika
- 3 large organic eggs
- White tortilla wraps
Instructions
Heat 4 tbsps of oil in a non stick frying pan over medium high heat
Sauté the onions for 2 minutes then toss in the tomatoes and and leave to cook until they start to break down.
Add in the jalapeno, paprika, salt and pepper to taste and mix well
Now pour in the whisked eggs evenly and after a minute stir through, crumbling as you go. Then add 2 tbsp of oil and continue stirring until it all starts to brown. You can stop cooking once the eggs are to your preferred texture. Drizzle in 3 tbsps of ketchup and after a good stir take it off the fire
If you have a grill you can lightly heat up the tortilla wraps. Otherwise if you don't; you can heat up 1 tbsp of oil in a wide shallow frying pan and coat the tortilla with the oil on both sides. Then leave to heat up and slightly brown on each side for about 30 seconds to 1 minute
Lay the tortilla on a cutting board and fill with the eggs, roll up and dig in!
If you like a bit of crunch on the tortilla, roll it up well and put it back on the grill (with a top and bottom grill) for a nice crisp.
