I dread the “mom, can we have some french fries with that?” question. Don’t get me wrong, I am no ‘french fries snob’ but I try to limit how much of it my kids and I eat. This is why when I am not making these delicious Oven roasted potatoes with rosemary and garlic that I consider being a healthier substitute, then I am making these oven-roasted caramelised carrots (or oven-roasted carrot chips as my daughter calls them) which are caramelized sweet with just enough chew.
These oven-roasted caramelized carrots are also great for when you are hosting a crowd and want a variety of vegetable sides.
Or perhaps for packed lunch or as a snack to trick your mind from wandering to the next vending machine for bars to curb your sweet tooth cravings.
You need a microwave steam container. I do not include any measurements for the recipe.
How to Make Oven-Roasted Caramelised Carrots
Making these oven-roasted caramelized carrots is easier to make than you might think. I am blushing at the thought that I am dedicating a whole post to it when all this takes is just 3 simple steps.
Step 1. Cut the carrots horizontally to equal sizes, this makes sure they all take roughly the same time to get ready without some crunching up before the rest getting ready.
Step 2. Preheat the oven to 200ยฐC/392ยฐF and while that happens steam the carrots in the microwave for 5 minutes at full power.
Step 3. Toss the steamed carrots in a little olive oil and transfer them to a baking tray, space them out and roast for 35 minutes, flipping the oven-roasted carrots halfway through.
