How to Make Chicken Souvlaki
Step 1: Make the tzatziki sauce and store it in the fridge.
Step 2: Remove the excess fat (leave a little on) from the chicken, dice it into bite-sized pieces, and put them in a bowl.
Step 3: Sprinkle salt, black pepper, minced garlic, lemon, oregano, and olive oil onto the chicken, and massage to evenly coat. Leave the chicken thighs in the fridge to marinade overnight or for at least 1 hour.
Step 4: Thread the chicken onto skewers and grill or cook them on a skillet over medium heat for about 7-8 minutes or until well browned and cooked through.
Serve with homemade tortilla, naan, pita bread, or wraps, topped with the tzatziki sauce, lettuce, or gentle salad.
How to Make Tzatziki Sauce
Homemade tzatziki sauce is simple to make and can easily be tweaked to your taste should you want it more lumpy, salty, or tart.
Step 1: Cut the cucumber lengthwise and scrape out the seeds.
Step 2: Grate the cucumbers, put them in a tea towel or muslin cloth, and squeeze to remove the excess liquid.
Step 3: Tip the grated cucumber into the bowl with Greek yogurt then sprinkle salt, black pepper, minced garlic, lemon, vinegar, and olive oil before mixing well; and storing in the fridge.
Storage
Keep any leftovers in an airtight container in the fridge and eat ideally within 24 hours

MARINADE
