This intensely chocolatey, homemade fudgy brownie recipe from scratch is so decadent and delicious, there was no way I couldn’t share them with you. First off, I will come out as confessing that I was never much of a brownie eater. But life is full of surprises and that’s one of the beauties of it.
BUT yes, this recipe blew me and fellow testers away, making us want to dunk homemade brownie cubes into our ice cream bowls and anywhere else we could think of. There is also that little but highly important fact that the recipe is incredibly simple.
I believe that brownies are like carrot or pound cake. Every family needs to have that ONE RECIPE they pull out anytime they want to impress. Or most importantly, just have a delicious bake tucked in the cupboard at home to whip to and enjoy over afternoon tea or for dessert.

How To Make Fudgy brownies
First: It’s always the best idea to measure out all the ingredients and have it all ready to go. The eggs should be at room temperature. Should you have plucked them from the fridge in a hurry as was the case with me. Just put them into a bowl of room-temperature water to sit for 10 minutes.
Light brown soft sugar has a way of clumping. So mix it with the caster sugar and salt then sift just to be sure there aren’t other lumps.
Then: Start off by roughly chopping the chocolate and melting it in a microwave or bain-marie.
Should you choose the microwave route, make sure to stir the chocolate at every 15-second interval, for at least 5 seconds before putting it back in the microwave. (Stirring the chocolate hastens the melting of the still chocolate solids). Then set it aside as you tend to the butter.
Dissolve the coffee granules to the warm melted butter.
Add in the sugar, salt, and vanilla then whisk until combined. The mixture should have a thick grainy caramel look to it.
Now: add in the eggs and whisk for a good 3 minutes. Then pour in the melted chocolate and after whisking for a few seconds, tip in the flour and cocoa powder mixture and fold using a spatula.
And finally: Pour the brownie batter into the parchment-lined baking tray, to bake for 20 minutes at 180°C. Is this the best homemade brownie recipe or what?

Intensely fudgy brownie recipe from scratch
A chocolate rich, moist and decadent, fudgy brownie recipe with the famous and coveted crackled top.
Ingredients
- 200g dark chocolate (at least 50% cocoa)
- 200g (1 and 3/4 sticks) unsalted butter
- 1 tbsp instant coffee granules
- 1 tbsp vanilla extract
- 156g (1 cup) caster sugar
- 35g (1/4) cup light brown soft sugar
- 1/4 tsp salt
- 3 medium eggs
- 70g (1/2 cup) plain flour (all-purpose flour)
- 27g (1/4 cup) of cocoa powder
Instructions
Line a 10 x 3-inch square baking tin with parchment paper and preheat the oven to 180°C
Melt the chocolate in the microwave or over a bain-marie and set aside
Stir the instant coffee granules to dissolve with the melted and still warm butter.
Sift the sugar, salt (this ensures there are no lumps from the soft brown sugar) and vanilla extract into the butter mixture then whisk until combined. It should look like thick grainy caramel
Next, add in the eggs and whisk for at least 3 minutes, before pouring in the melted chocolate
Sift in the flour and cocoa powder (at the same time) into the chocolate mixture and gently fold using. spatula.
Tip the brownie batter into the lined baking tin and bake for 20 minutes
Leave to cool completely before cutting to squares
Notes
When stored in the fridge, the brownies will firm up.
