I have to admit, whenever I could I have always avoided salad, and arugula salad recipes even more! However, I would gladly pop some veggies as a side but have a warm main course. When I was in college, I had some rough times. Rough because – well, they did their best to look out for our health by making sure we had the largest portion of the buffet dedicated to salads and all the accompaniments you could think of.

And as you can imagine, this again meant digging into my shallow student pockets for sweet and sour chicken. When I needed a pick-me-up, it would be cheese fondue hands down. Ahh, good ol days.

Salad found its way back into my good graces while in Italy. But perhaps that was only because I knew there were a few other courses coming up. Eh ehm, no judgment 🙂

And while Fran remains ever true to his balsamic vinegar. I have learned throughout these years that salad needn’t be boring. It needn’t have only one particular dressing and this applies to mains and desserts and just every recipe you are trying to come up with. Don’t get stuck in what society deems as the norm. Straying from the most often chosen path can sometimes lead you to adventurous and exciting places.

This recipe uses the ever-sweet balsamic dressing to wrestle that peppery rocket flavor. I know, I know. Sounds a bit hypocritical as I had mentioned the practice of “occasionally straying” from the norm. But hang on, there are other salads here to pique your interest. With dressings ranging from mint, honey, peaches, and even ginger made the list. So stick around my leaf-eating friend…

Oh, this just came to me- you could use a balsamic fig dressing for this recipe if you don’t have that dark thick sweet, and tangy balsamic vinegar at home.

Peppery rocket, sweet figs and crunchy toasted slivered almonds countered with avocado and a balsamic dressing. Let's eat!

Ingredients

  • 50g Rocket
  • 3 Figs
  • 20g Toasted slivered almonds
  • Balsamic cream
  • Cherries (optional)

Instructions

Skip the traditional single serve salad bowl and plate the salad in plates

Start off by having your rocket in one large bowl, pouring the olive oil over it and sprinkle in some salt and black pepper. Use your hands to gently toss just to make sure the oil is evenly spread.

Moving on to the individual plates now: spread each one with a bed of rocket, layer that with a few sprinkles of slivered almonds and tuck in quartered figs between the rocket leaves

You may add some halved pitted cherries if using

Finish it off with the balsamic cream beautifully streamed over the salad
