Keko & Uncle Luigi’s Ham and Cheese Frittata

It’s not just football

Visits to Francesco’s uncle Luigi were always a pleasure. He has his designated seat at the house and from time to time will get up for a cigarette; and stand looking out into nothingness seemingly lost in thought. A calm man who never shouts; is curious, and more like a second father than an uncle. When Francesco was younger he would always go over to watch the game. As you might or might not already know: football is a big thing in Italy. And in Napoli?

Well, I would say it seems more like a religion down there. With the World Cup on, the streets were bare and silent with the exception of cheers and curses from neighbours when goals were scored or missed. Frittata was the food of choice because it was quick and didn’t need them to leave the sofa. Perfect when they needed to have their eyes glued to the screen.

If like me you have days when you prefer to have it flat rather than scrambled with a little cheesy treat in between then this is perfect. Otherwise, you can have the scrambled version which is somewhat lighter. It’s made of scrambled ham and eggs with some grated parmesan and black pepper- ditch the cheese slices. Make the frittata into a burrito or just top a slice or two of wholegrain bread.

Frittata made with ham and cheese filling.

Ingredients

  • 2 slices of cooked ham
  • 4 medium eggs
  • 4 slices of cheese (preferably one with an intense flavour)
  • salt and black pepper
  • 30g grated parmesan
  • 2tbsp olive oil (you may use unsalted butter if you prefer)

Instructions

Whisk together the eggs and parmesan with a pinch of salt and fresh cracked black pepper

Heat the oil in a non-stick frying pan over medium high heat and when hot pour in the egg mixture to cook for about 2 minutes then flip it over and arrange the one slice of cheese on one half of the egg- top that with one slice of ham then another slice of cheese (you may dice the ham and cheese as you put them on to have them evenly distributed)and fold the empty half of the egg over the side with the ham and cheese layers

Put it back on the fire to fry for about 1 minute on each side depending on how well done you like your eggs

serve between fresh baguette or wholemeal slices
