Wouldn’t it be nice to have a fishmonger close by with a fresh catch of anchovies? I would like nothing more than to clean a batch, roll them in some plain flour and deep fry. Served with a side of lemon, and there you go. A quick appetizer that few could find fault with. However, if like me you have to rely on the canned/jar anchovy, I’m sure you have questions on storage and other ways to use leftovers which I will share with you.

So, you came across a recipe that called for 4 pieces of anchovy. It was delicious but you can only make the same recipe over and over again. A can of anchovies comes in various sizes, but what remains the same is how long you can keep an open jar/can in the fridge after opening it.

Anchovies are packed in two ways. The first is not filleted and is packed with lots of salt. While the others have had all the work done for you, i.e they have been filleted, cured, and packed as a paste, or fillets in an oil brine. Both are either canned or packed in jars.

Does canned anchovy expire?

While I wish it was one of those that could withstand the test of time. Sadly anchovy does expire at some point too. Yes, they have a long shelf life of a year but keep an eye on the pack date.

How do i store an opened?

If you opened a can then you should transfer the leftover anchovies to a container with an airtight lid. Make sure to cover the fish with oil, preferably the same type that it was canned with i.e olive or vegetable. If the leftovers were in a jar then you can leave it in the same jar, just make sure the anchovy is submerged in oil. Make sure it is still good to eat before serving.

How long can i keep opened anchovy in the fridge?

It can keep in the fridge, submerged in oil for weeks to a month. I try not to push storage for too long after opening.

Ideas for leftover anchovies?

You opened a can of anchovies and only used 3 to make sfincione. But now you’re stuck with a 3/4 tin, unsure of what to use it on. Well, here are a few ideas and recipes you can splurge them on.

Make ahead: But you do not have to stop there, make a batch of the puttanesca sauce, and freeze the rest in portioned zip-lock bags for later.
