Cheesy Spinach Frittata Tortilla Wrap

All hail the tortilla wrap hack trend that has taken over our social newsfeed and maybe news channels! And now, this foodie has jumped on the tortilla wrap bandwagon to satisfy my Instafam‘s request for breakfast wraps. So here goes something …

I am yet to understand why spinach is sold in massive bags! I would like to believe it is to get us to eat more veg but I highly doubt it. However, you and I do need to beef up on our veg whenever possible.

Make That Tortilla Wrap

And for eaters like myself who aren’t big fans of the green stuff, it’s best to just get it over with in the morning. Whip it in a shake, or steam it and stir through frittata with Parmigiano Reggiano, then seal in a perfect tortilla wrap with a secret fold of cheese.

Spinach: The recipe uses 30g of already cooked spinach with the water squeezed out. You can use frozen spinach as well, just make sure you completely thaw it first then squeeze out the water.

Butter: I used browned butter, but you can use regular butter insead 🙂

What type of cheese? Oh well, use the light Leedameer and trick yourself into thinking it’s healthy because it’s lighter than its counterpart. Or mellow things down with Parmigiano splits that are sure to melt, teasing your tastebuds with their nutty flavors.

Did I forget the freshly ground black pepper? Why how dare me?!!!! You absolutely need to add a good few shakes of that in the spinach frittata to really make it sing!

Oh, there is also a fold featuring thinly sliced ham that I am sure your spinach will get jealous of. So ‘marry’ them in this simple tortilla wrap and devour like it is your first meal in too long! Just thought of this right now, but you could also use cooked pancetta

Eh ehm, you know I would not leave you without a ‘make your own’ option for the tortilla wrap. If it is one of those days when you ran to the store and forgot to buy some or you just don’t have some at home then I’ve got you. Run to your pantry and prepare to make my super simple flour tortilla.

Make the tortilla a day ahead, then the spinach frittata in the morning. You can also make the frittata a day ahead and store it in the fridge then fill and toast in the tortilla wrap before serving. Though I do recommend making the spinach frittata on the day you plan to eat it.

This is a fun and super easy tortilla wrap recipe made with a filling of spinach frittata, thinly sliced ham and mellow leerdammer cheese.

Ingredients

  • 30g cooked baby spinach
  • 1 large egg
  • 20g finely grated Parmigiano Reggiano/parmesan
  • Black pepper
  • Salt
  • 2 Thinly sliced ham
  • 4 Leedameer cheese (or another mildly flavored melty one)
  • 2 Tortilla wraps

Instructions

Remove the stems from the baby spinach and wash thoroughly

Bring water to a boil in a large pan and carefully put in the spinach. Using a tong, stir to ensure all the spinach is submerged and drain in a colander after 2 minutes.

Squeeze out the water and tip the spinach onto a cutting board, and roughly chop

Whisk the eggs, Parmigiano, salt, and black pepper in a large bowl then add in the spinach

Heat a wide non-stick pan over medium-high heat, drizzle in 3 tablespoons of butter, and pour in the egg mixture. Cover the pan and reduce the heat to low and cook for 3-4 minutes or until the top of the egg looks solid, then carefully flip it over to cook the other side for another 3 minutes.

Take the spinach off the stove to cool

Place the tip of your knife in the middle of the tortilla and cut down the middle

Add the egg to one quarter, then the cheese on another, followed by the last the ham and lastly cheese. Fold and grill until the cheese has melted
