Chicken Patty with Onion and Bell Pepper

Summer recipes call for these easy-to-make chicken patty with onion and bell pepper. It is a simple child-friendly chicken recipe that you can enjoy in a durum wrap with an onion, tomato, and cucumber salsa drizzled with your favorite creamy sauce.

How to Make Chicken Patty With Onion and Bell Pepper

Step 1: Finely chop the onion and bell peppers. Do the same with the chicken thighs. If you have a food processor, finely process the onions and bell peppers first before adding in the chicken thighs until it forms what looks like a paste.

Step 2: Tip the chicken mixture into a bowl and sprinkle in the spices. Mix well until evenly combined, then cover and leave to rest in the fridge for an hour or until it is a little firmer than it was when processed.

Step 3: Use a spoon or scoop to portion about a heaped tablespoon worth of the chicken mixture onto your hand. Roll it into a ball and place it on a cut-out parchment paper, do the same for the rest.

Step 4: Put another cut-out parchment paper on top of the rolled up chicken and gently press to flatten it into a chicken patty.

Step 5: Spray a little oil on a griddle and gently holding the parchment paper, flip it onto the griddle. Wait a few seconds before gently peeling off the parchment paper. Grill for a few minutes until golden brown and cooked through on each side.

For a light low carb chicken lunch idea, you could use gentle salad as a wrap instead.

Alternative Chicken Patty Ideas

1. Shape the chicken mixture into a sausage shape instead. You could do so by putting each one in between cling film and leaving it in the fridge or freezer just until it is slightly solidified enough.

2. Shape it into a chicken patty burger. So do not flatten it too much.

Rest on a plate until you’re ready to serve. Can be stored in the fridge for next day consumption but not recommended.

Can be done in the oven. But the chicken patties are best eaten on the same day.

1. The chicken patties are already child-friendly. But you could personalize it even more by reducing the onion which can be a little overpowering.

Ingredients

  • CHICKEN
  • 1 small red onion
  • 1/4 (2 tablespoons) red bell pepper
  • 1/4 (2 tablespoons) green bell pepper
  • 200g boneless chicken thighs without skin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon plus a pinch of salt
  • SALSA
  • 1 small red onion
  • 1 beef tomato
  • half a cucumber
  • FINISH
  • your favourite sauce
  • durum wrap

Instructions

PREPARE THE SALSA

Finely dice a red onion. Cut the tomato and half the cucumber. Mix and put it in the fridge.
